Red Wines

Bourgogne «Cuvée Gravel»

Located in the villages of Bligny and Pommard, the sub-soil is essentially made up of gravel. It is a wine of medium color intensity and offers an impressive range of aromas, which is characteristic of Pinot Noir. Its natural suppleness and moderate tannins allow it to be drunk quite young while ensuring aging (5 to 10 years). Served between 14 and 16 ° C, it accompanies grilled red meats, roasts, cold meats, etc. 

Chorey les Beaune

A rather supple and moderately tannic red wine with fine aromas of red berries. This wine is elegant more than powerful. He calls for fine and light cuisine: roasted poultry, grilled meats or mild cheese, such as Reblochon or Brie. 

Ladoix

A red wine grown on marl limestone soil with fairly firm tannins. The softness will reveal itself after a necessary period of maturation (3 to 4 years). Ladoix will accompany fine meats, roasted, grilled or in light sauces. 

Auxey Duresses

Produced mainly on bluish limestone marls, the Pinot presents here a supple wine with good tannins. Over time, it will release a very fine bouquet with an animal touch in older wine. Young, it will accompany roasts, grilled or pan-fried meats, old, it will be more suited to meats in sauces dishes and not too strong game.

Savigny les Beaune «Vieilles Vignes»

A red wine with a very elegant and fairly powerful bouquet, supple and discreetly tannic on the palate. This light composition gives it a feminine image. The Premier Crus, more robust, lack neither character nor power and require more prolonged aging. The Savigny wines call for light cuisine, red or white meats, even game birds. Only the premier crus will tolerate a slightly strong sauce.

Pommard «La Chanière»

Geologically, the marly Argovian soil is replaced by soft limestones and clays rich in iron. This leads to wines of a deeper color with an intense bouquet of berries, musk and game meat. Its flavors are dominated for a long time by the tannins and it needs to mature a while for the mellowness to appear. This is one of the strongest and most tannic vintages in Burgundy with great aging potential (15 to 20 years). It goes well with quite spicy dishes with a strong flavor, hare pâté, pheasant, wild boar, steak in wine, duck confit, etc. 

Les Blancs

Bourgogne aligoté

Located in the towns of Bligny and Pommard, the first wine mentioned is made from the Aligoté grape and the second from the Chardonnay grape. These two wines are made from grapes harvested quite late in the season and often attacked by botrytis, which will give generous and buttery wines. They will go well with cold meats paté, fried fish, etc.

Les blancs issus du cépage Chardonnay ne manque pas non plus de corps ni de charpente, ils accompagneront timbales de fruits de mer, pâtés chauds, terrines, etc.
